Firstly, congratulations on being expectant parents – I bet you are both over the moon?
Thank you. Yes, we are both so happy to be bringing a little person into the world; we can’t wait to meet him/her. It’s going to be lots of fun and hard work, as everyone keeps telling us! With a bit less than 3 months to go, Frea has taken a step back from the kitchen, but can’t quite give it away, coming in to prepare desserts still (and checking up on us too, I think!).
Introduce us to your new chef, and tell us a bit about him?
We were lucky enough to get local chef Chris Harris on board with us. He came back to town a few weeks ago and jumped straight in. He’s a well known local chef, having set up and run Luxe Café, behind Port Central, for 7 successful years. Prior to this, he did his apprenticeship around town, then worked in Sydney at Bilsons, the Gold Coast and on board a luxury boat. More recently, he and his partner, Leasa, ran a 5 star bush retreat in Queensland called Spicers, where Chris had to cook 7-course degustation dinners every night for guests. Chris is a talented and motivated chef, and it’s a pleasure to have him cooking with us down at Fusion 7.
Fusion 7 has been open and operating for 6 years now. What do you think it is that keeps the customers coming back?
The last 6 years seemed to have flown by. There has been a fair bit of change over the years, from the furniture to the logo, but our commitment to serving honest, tasty food has not changed since our opening day. We have set ourselves a standard of consistency and try our best to stick by that. Serving food combinations that most people wouldn’t try at home has become our trademark. The majority of our customers get a little bit excited trying something new when they dine with us, and a friendly smile helps as well!
With winter now upon us, will there be any changes to your menu?
Definitely. The winter menu has already started! From the squid ink pasta with scallops and umeboshi butter, which melts in your mouth; beef rump with kimchi and miso aioli, perfect with a nice big glass of Shiraz; or warm up with sticky fig and banana pudding with salted butterscotch sauce and tamarind ice cream … yum!

Fusion 7 is all about our passion and commitment to serving great food and wine. Each one of the F7 crew loves producing, serving and eating great food. This in turn creates a passionate and professional atmosphere. So for all those foodies and wine lovers who haven’t been to see us yet, you can sample a bit of everything at our degustaition dinner.
